Nepalese lamb stew

Nepalese lamb stew

Serves: 2-4

Ingredients:

2 tbsp vegetable oil

½ tsp turmeric powder

½ kg lamb bite pieces (prefer some with bone)

200g white radish cut into thick chips size

2 medium potatoes peeled and halved

1 fresh tomato finely chopped

1tsp salt

1 tbsp crushed ginger

2 tsp cumin and coriander powder

1 tsp paprika powder 

½ tsp chilli powder (or according to your taste)

½ tsp ground cardamom powder

Pinch of cinnamon powder

Handful of fresh coriander

Method:

Heat oil in a heavy base pot.

Add lamb pieces with turmeric and salt.

Cover and cook for 3-4 minutes in a medium to low heat.

Add potato and radish, stir and add cumin coriander powder, chilli, paprika and tomato.

Stir and add about 250ml water and cook until the lamb pieces are cooked thoroughly with cover on. This will take about 20-25 minutes.

At the end, add cardamom, cinnamon powder, ginger and fresh coriander.

Serve hot on its own or with bowl of rice or bread of your choice.
