Bacon belly, pork, potato and bean hash with free range egg

Ingredients

150g  cooked sausage meat or pulled pork

100g cooked bacon lardons

½ sweet potato, diced and roasted

4 baby potatoes, diced and roasted

½ red pepper, diced

½ green pepper diced

50g jalapenos

70g mixed beans

1 small onion, diced

Handful of fresh coriander

½ tsp paprika

½ tsp Cajun or other spice

4 free range eggs

Drizzle of vegetable oil

Hot sauce to serve.

Salt & pepper to taste

 

Method.

Heat a large frying pan and add some oil.

Add in the onion and peppers and saute until soft.

Season well and add in the pork, bacon, sweet potato and baby potato. Mix well and continue to saute on a high heat for approximately 4 minutes

Now add in the mixed beans and cook for 2 more minutes.

In a frying pan heat some oil and add in the eggs to fry.

To finish, chop the coriander and mix through the hash.

Divide between 4 bowls and top with an egg and serve with some hot sauce.
