Chickpea Curry with Chicken and Baby Spinach

Ingredients

 

  • 2 chicken breast cut into small pieces
  • 800gm/2 tin chickpea
  • 3 tbsp veg/rapseed oil
  • ¼ tsp turmeric powder
  • ½   tsp salt or to your taste
  • 1 fresh tomato chopped
  • ½ tsp cumin and coriander powder or curry powder if its handy for you.
  • 2 c loves of garlic peeled and crushed or grated
  • 1 fresh chili halved (optional)
  • 1 tbsp lemon juice
  • 2 handful of fresh baby spinach
  • fresh coriander to garnish

 

 

 

Method 

 

  1. Heat oil, add chicken pieces, cover and cook until chicken is golden brown.
  2. Add chickpea and  tomato with turmeric, salt, cumin and coriander powder and cook for a minute or 2.
  3. Finish the dish with lemon juice, spinach and coriander.
  4. Serve on its own or with some pitta bread or enjoy it in a wrap.
