INGREDIENTS:
Prawns - peeled & deveined (12)
Sea Salt
Black pepper
Shallot x 1 peeled & chopped
Garlic x 1 clove
Chorizo sliced x 100gr
Cherry tomatoes x 100gr
White wine x 200ml
Cream x 250 ml
Basil x handful sliced
Lemon x 1 halved
Rocket x handful
METHOD:
1). Season with salt & pepper, then sauté the chorizo in a hot pan until the oil is released.
2). Add your shallots and cook for one minute. Add the prawns and garlic, then sauté
3). Season and add the cherry tomatoes, then pour in your white wine and cream to reduce.
4). Add a squeeze of lemon and black pepper, then stir and add in the fresh basil and rocket.
5). Serve immediately with toasted sourdough or rice.
