Plant Based Kofta Kebabs
Ingredients
500 g plant based mince
2 large garlic clove crushed
¼ cup pistachios roughly chopped
¼ cup parsley finely chopped
¼ cup mint finely chopped
1 tbsp fresh thyme leaves or 1tsp dried thyme
2 tsp cumin
2 tsp ground coriander
2 tsp paprika
2 tsp sumac
½ tsp ground cinnamon
3 tbsp olive oil for frying
Method
Place all the ingredients in a large bowl along with a good pinch of salt and pepper and mix with your hands until well combined.
Using damp hands, divide the mixture into 12 equal kofta's. You can either mold them around BBQ skewers or leave as is.
chill for 30 minutes in a fridge
Heat the oil in a frying pan over medium-high heat.
Cook the kofta's in batches if needed for 8-10 minutes or until golden all over and cooked through.
Notes
Pistachios give a wonderful flavour and crunch but if you don’t have these or if there is a nut allergy in your family the koftas will still taste great without them!
Serve with flatbreads, tabbouleh and hummus if desired or great on their own with a zesty Greek or tomato salad.
