Makes: 4x adult servings
Ingredients:
4 skinless chicken breasts, sliced
1 red onion, sliced
1 red and yellow pepper, sliced
1 tbsp paprika
1 tbsp coriander
A pinch of cumin
Juice of 1 lime
Drizzle of olive oil
Pinch of salt and pepper
Accompaniments:
Tortillas
Salsa
Guacamole
Sweetcorn
Crème Fraiche or Natural Yoghurt
Grated Cheese
Method:
1. Mix everything together in a bowl, ensuring your chicken is evenly coated with the spices.
2. Heat a griddle pan over a high heat until very hot.
3. Cook the coated chicken and vegetables for six to eight minutes, or until the chicken is cooked through.
4. Remove from the heat.
5. Put the chicken and vegetables into a bowl.
6. Place on your dinner table along with heated tortillas, salsa, sweetcorn, crème fraiche, and cheese.
