Meat-free Sheperd's Pie

This is a hearty, wholesome dish that will satisfy the most carnivorous of carnivores, a tasty meat and dairy free shepherdless pie for the whole family, and if you like cheese or are cooking for a group of meat-eaters, then putting some grated cheese (dairy free options too) on top of the mashed potato before baking in the oven will make the dish even richer.

Ingredients

1 bulb of garlic
2.5 kg of Maris Piper/Rooster or a potato of your choice

A knob of dairy free spread( butter will do the same )

A good pinch of grated nutmeg Seasoning olive oil

Method:

Pop your whole bulb of garlic into a tray , coat in oil and put into a pre heated oven ( 180 degrees) for approx 15 minutes until all squidgy.
Peel and steam your potatoes until cooked ,add your dairy free butter , season and grated nutmeg to taste and mash until lump free and that's your topping all ready to rock.


Meat-free Shepherd's Pie

Ingredients

1 tbs good quality oil
1 Large onion diced
2 medium carrots grated
1 medium parsnip grated
4 cloves of garlic chopped
a few sprigs of fresh rosemary and fresh thyme ( dried is perfectly ok) seasoning
1/4 tsp cinnamon
grated nutmeg
optional 1/2 tsp smoked paprika
1 tbs tomato puree
2 tbs brown sauce
1 tbs nutritional yeast( optional)
500ml veg stock
400g brown lentils pre cooked
( 1 big cup of washed lentils cooked with 2 big cups of veg stock for approx 20/25 minutes until soft)

Method

Add the olive oil to a large pan on a medium to high heat add the diced onion and sweat off for around 5 minutes

Add your grated carrot, parsnip, garlic and herbs with a little seasoning and cook off for another 5 minutes

Now add in your cinnamon, nutmeg,s moked paprika, tomato puree , brown sauce, cooked lentils and veg stock

Now we want to let this cook and reduce to intensify the flavours , so let it bubble away , stirring occasionally for around 30 mins.

Now with a slotted spoon, spoon the mix into your oven proof dish and add a little of the cooking juices but not to runny (the rest we can use for our gravy)

Add your roasted garlic mashed potato topping and fork it so its all scuffed allowing it to crisp up

Pop into a pre heated oven set at 180 degrees for about 20/25 minutes or until browned

And now you are ready for a healthy , hearty ,wholesome plant powered dish of winter yumminess.
