Beef Fillet Surf n Turf
Ingredients:
1x Beef fillet (cut into 2 x 4 oz pieces)
3x Jumbo Prawns (peeled and de veined)
3 x fresh Mussels (cleaned and de beard)
50g butter
1 clove garlic (crushed)
100ml White Wine
Juice of 1/2 Lemon
200ml cream
Chopped Fresh Dill Herb
3 x Cooked mini jacket potatoes (sliced)
1/4 Sliced White Onion
4oz Gluten free flour
1 tsp Cajun Flour
Method:
1. Steam mussels in pan with some white wine and covered with a lid
2. Mussels are done when Mussels are open and steam comes out from lid. Set aside for one minute
3. Heat a chargrilled pan and when piping hot, brush oil over Fillet steaks. Place fillets steaks onto pan, sear on both sides until desired temperature is reached.
4. Approx cooking times: Rare 1 min each side
Medium Rare 2 mins each side
Medium 3 mins each side
Medium well 4 mins each side
Well Done 5 mins each side
5. Take Beef fillets from pan and leave to rest until service (approx 5 mins)
6. Place sliced potatoes into pan with small amount of oil and fry till golden on both sides
7. Return pan with Mussels to high heat and add butter, once sizzling then add prawns and cook for 1 minute. Add lemon juice, garlic and cream, reduce a little and finish with chopped dill. Season to taste ready to serve
8. Place sauté potatoes in middle of plate, place seared Beef fillet on top of potatoes. Drizzle hot Mussels and Prawns with sauce around edge of plate.
9. Deep fry Cajun dusted sliced onions and Place on top of Beef Fillet
