Crispy Teriyaki Beef with Smashed Cucumbers and Mango Salsa and a Coconut Lemongrass Rice

Serves 4Ingredients

Crispy Teriyaki Beef500g lean pork mince500g lean beef mince4tbsp sweet chilli sauce6 tbsp teriyaki sauce2 tbsp soy sauce3 cloves garlic3cam fresh ginger1 tsp lemongrass paste3 spring onionsSesame seedsGarnish: lime wedge & coriander

Salsa250g chopped mango1 small red onion2 small sweet red peppers1 green jalapeño chilli1 tsp lime juiceSmashed Cucumber1 punnet baby cucumbers ( 250g )1/2 tsp salt1 tsp sugar2 tbsp soy sauce1 tbsp rice wine vinegar1 tsp chilli oil / peanut rays2 tsp sesame seeds1 clove garlic grated

Coconut Rice1 400ml tin coconut milk800mls water1 empty tin basmati rice ( 400g)1 tsp sea salt2 tsp lemongrass paste

MethodCoconut & Lemongrass Rice:

Bring the 800mls water, coconut milk and lemongrass paste in alarge saucepan and bring to a gentle boil. Rinse the basmati rice and place in, stir once, pop a lidon and over a low to medium heat allow this to simmer until all the liquid is absorbed. To serve,remove the lid and fluff up lightly.

Crispy Teriyaki Beef:

Warm a large frying pan, add the mince to the dry pan and move it aroundas it cooks and browns. Allow it to cook for about 8-10mins then grate in the garlic and ginger andadd in the lemongrass paste. Add in the sauces and allow this to cook over a medium to high heatfor 20-25 minutes until it begins to get a little sticky and crispy bits form.Smashed Cucumber:

Cut the top and bottom off the cucumber. Cut on the diagonal. Sprinkle withsalt and sugar and allow to sit in a sieve for a few minutes for any excess water to drain out, thengrate in the garlic, add In the other ingredients. Stir everything together and allow it to marinate.

Salsa:

Finely dice the red onion, deseed and finely dice the green chilli and sweet mini redpeppers, slice the mango. Combine everything in a bowl, toss in the lime juice. Cover and chill.Optional: toss with coriander.

To Serve:

Spoon the rice in a warm bowl, spoon in the crispy teriyaki beef next, top with thesmashed cucumber and the mango salsa. Garnish with spring onions, sesame seeds, corianderand a wedge of lime.

Notes : If you can only get regular cucumber, they work great - use 1 big one and scoop of theseeds if you can. For the salsa, regular red pepper works fine too.
