Sham Hanifa's Javanese Soy Chicken
Ingredients:
Chicken Marinade: 1 kg Chicken, diced 1 tsp. Chilli Powder 1 tsp. Turmeric 1 tsp. Ground Cinnamon 1 tbsp. Oil3 cups Sweet Soy Sauce
2 cups Water 3-4 Dried Chilli 1 thumb-sized piece of fresh Ginger 2 Shallots, thinly sliced 4 Star Anise 4 Cardamom Pods 1 Cinnamon Stick 1 tbsp. Oyster Sauce 1 tsp. Chilli Powder 1 tsp. Turmeric 1 tsp. CuminMethod:
1. Add the diced and chicken to a bowl with the marinade ingredients and some oil. 2. Add some oil to a non-stick pan and start to fry off the chicken until it becomes a nice shade of brown. Add the shallots, turmeric, cumin, cardamom pods, cinnamon stick, dried chilli and ginger to the pan with the chicken. 3. After a few minutes, add in the soy sauce. When it starts to thicken, you can bring it down with the water. The chicken should be cooked with the pan starting to boil. 4. You can let the sauce reduce completely or add flour to thicken the sauce up. 5. If you wish, you can add some vegetables to the dish at this stage – some baby corn or sugar snap peas. 6. Check for seasoning and add more soy sauce or a pinch of sugar if required. 7. Serve with Jasmine Rice.
