Javanese Soy Chicken

Sham Hanifa's Javanese Soy Chicken

Ingredients:Chicken Marinade:1 kg Chicken, diced1 tsp. Chilli Powder1 tsp. Turmeric1 tsp. Ground Cinnamon1 tbsp. Oil

3 cups Sweet Soy Sauce2 cups Water3-4 Dried Chilli1 thumb-sizedpiece of fresh Ginger2 Shallots, thinly sliced4 Star Anise4 Cardamom Pods1 Cinnamon Stick1 tbsp. Oyster Sauce1 tsp. Chilli Powder1 tsp. Turmeric1 tsp. Cumin

Method:
1. Add the diced and chicken to a bowl with the marinade ingredients and some oil.2. Add some oil to a non-stick pan and start to fry off the chicken until it becomes a nice shade of brown. Add the shallots, turmeric, cumin, cardamom pods, cinnamon stick, dried chilli and ginger to the pan with the chicken.3. After a few minutes, add in the soy sauce. When it starts to thicken, you can bring it down with the water. The chicken should be cooked with the pan starting to boil.4. You can let the sauce reduce completely or add flour to thicken the sauce up.5. If you wish, you can add some vegetables to the dish at this stage – some baby corn or sugar snap peas.6. Check for seasoning and add more soy sauce or a pinch of sugar if required.7. Serve with Jasmine Rice.
