Chef Derry Clarke shares this delicious recipe for Soy & Honey Glazed Salmon with Summer Greens.
Ingredients
4x150g Salmon Filets.
200g Blanched Broccoli.
200g Blanched Peas.
200g Sliced Courgette.
1 Shallot Finely Sliced.
200ml Vegetable Stock.
50g Butter.
1 Red Chilli Deseeded and Sliced Lengthways.
1 Clove Garlic Chopped.
1 Thumb size Fresh Ginger Sliced.
50ml Soy Sauce.
1tbs Honey.
2tbs Chilli Sauce.
Juice of 1 lime.
Method
Heat a frying pan, add a little vegetable oil. Place Salmon Filets skin side down on the pan. Cook for 2mins each side, season and add fresh chilli, garlic ginger then soy, honey and chilli sauce, simmer gently for a min and add lime juice.
Heat a saucepan, add vegetable stock and shallots, simmer for a min or two, add the vegetables and butter simmer for 1min.
Place vegetables on plates, and Salmon on top, let the soy and honey come to a glaze and spoon over Salmon.
