Mushroom Stroganoff

Mushroom Stroganoff by Graham Herterich.
Ingredients
- 2tbsp Olive Oil
- 500g Mushrooms
- 1 Onion
- 2 Cloves of Garlic
- 2 Gherkins, finely diced
- 50ml Whiskey
- ½ tsp Smoked Paprika
- 1tbsp Worcestershire Sauce (optional)
- 200ml Crème Fraîche
- Salt & Black Pepper
- Small bunch Parsley
- Juice of ½ Lemon
- Boiled Rice to serve
Method
- Heat 2 tsp olive oil in a frying pan & soften the finely sliced onion for 5 mins on a medium heat.
- Add crushed garlic cloves & cook for 1 min more. Add mushrooms & cook on a high heat, stirring often, for 5 mins.
- Stir in the gherkins, smoked paprika, whiskey and Worcestershire sauce & heat through for one minute.
- Turn off heat & stir in the Crème Fraîche & some chopped parsley. Ensure the pan is not on the heat or sauce may split.
- Serve with freshly cooked rice, some extra parsley on top and a wedge of Lemon.
