Add the sugars, salt and butter into a bowl and using a machine or wooden spoon, cream the mix together until there is no lumps of butter left. It should be a smooth paste, but its okay if the sugar hasn’t dissolved.
Add the eggs and yolks along with the vanilla essence and whisk into the butter mix until it all fluffs up a little.
Now sift in the flour, soda and custard powder. Stir in with a spoon until a smooth dough is formed.
Fold in whatever fillings you want and don’t worry about the quantities just pop whatever you fancy into the mix.
Cover the bowl with clingfilm and allow the dough to rest in the fridge for at least 30 minutes but overnight is ideal.
Preheat an oven to 180?c.
Using a potato scoop or make a 120g dough ball. Line a tray with parchment paper and place the cookie dough balls onto the tray with about 2 inch’s between each ball.
Place into the oven and cook for 20minutes. If you want to make your cookies smaller its ok, but remember they will take less time to cook.
Once they are golden, remove from the oven and allow to rest for one hour.
Enjoy with a pint glass of milk.
