Ingredients
(Serves 5)
Oil
4 eggs or 4 tbsp milled chia or flax whisked with 12 tbsp water
300g plain yoghurt
125g oats
4 tbsp desiccated coconut
150g frozen berries
Optional extras: 50g chocolate, chopped into chunks; zest of 1 lemon; 1 tsp vanilla extract; 50g mixed seeds or chopped nuts; 2 bananas, sliced
Method
1) Preheat the oven to 200°C/180°C fan/400°F and grease an ovenproof dish or square baking tin with oil
2) Whisk the eggs and yoghurt together in a large mixing bowl
3) Stir in the oats, coconut and berries until no dry oats remain. Add any optional extras now too and save a little to spread over the top
4) Evenly spread the mix over the base of the lined tin and scatter any saved optional extras on top
5) Bake in the oven for 20-25 minutes or until lightly golden on top and a skewer comes out clean
6) Serve in a bowl with another dollop of yoghurt
