Sinéad Delahunty has a quick and easy option in store with her Smoky Bean Quesadillas!
Smoky Bean Quesadillas
(Serves 4)
Ingredients
oil
3 cloves garlic, minced
½ white or red onion, diced or 4 scallions, thinly sliced
3 medium tomatoes, chopped
1 x 400g tin red kidney beans, drained & rinsed
1 heaped tsp smoked paprika or cayenne pepper
4 wholewheat tortillas
100g grated cheese
Method
1) Heat one teaspoon of oil in a frying pan over a medium heat
2) Add the garlic and onions and fry until soft. Add the tomatoes and continue to fry until the skin begins to blister
3) Stir through the beans and smoked paprika and begin to mash them up as you continue to stir
4) Place the mixture into a bowl, clean the pan dry and return to the heat
5) Add one tortilla flat onto the pan and spread 25g of grated cheese all over it
6) Once the cheese begins to melt spread 2 tablespoons of the bean mix over half the tortilla
7) Fold the tortilla over and press down with the back of a spoon or spatula. Once it begins to brown and crisp up, you know it is done
8) Remove the cooked tortilla from the pan and repeat with the remaining tortillas and bean mix
