Rub all the ingredients for the spiced beef into the beef and leave to marinate in the fridge. Leave to marinate for 7 days turning the beef everyday as required.
Place the beef in a pot covered in water, bring to the boil and gently simmer for approx. 3 hours until the beef is tender. Leave in the pot to cool if you are not eating straight away.
Place the beef into a tin ( baking tin would be fine) and weight down with a bag of flour or sugar.
Place the baby potatoes in a steamer and cook through. Remove and set aside to cool.
Mix all the other ingredients (except for gherkins) together and mix through when the baby potatoes have cooled.
Divide baby potato salad between 4 plates. Place baby potato in the middle of a plate.
Thinly slice the cool spiced beef and place onto of the baby potato salad. Top with little handful of mixed leaves.
Place gherkins on top and grind some black pepper on top.
