FOR THE BASE
1/2 a packet of digestive biscuits
1/2 cup dates, pitted (if dry, soak in warm water for 10 minutes then dry, Pinch sea salt and a drizzle of maple syrup to bind it all together)
Blitz chopped dates and a few biscuits for a few seconds then add the rest of the biscuts and a drizzle of maple syrup to bind it all together
I pop that into a tray lined with cling film ( so you can pull the whole out after) tray size aprox 20cm x 20 cm ish
FILLING
1 1/2 cups raw cashews (soaked in water overnight , then drained OR pour boiling hot water over the cashews, soak for 1 hour, then drain and blend , the longer you blitz the creamier it becomes )
ADD
1 large lemon, juiced
ADD
1/4 cup olive or melted sunflower spread (or any neutral-flavored oil)
ADD
1 can full-fat coconut milk (sub light coconut milk or another non-dairy milk for a less creamy result)but why would you ???
LAST ADD
200g of dairy-free dark chocolate i use a nice 80% dark chocolate (chopped and melted )
1/4 cup maple syrup or agave nectar to sweeten
TOPPINGS (optional)
