Healthy Halloween Cupcakes
80g porridge oats
180ml milk
1 tbsp honey
1 egg
4 tbsp caster sugar
135g flour
2 tsp baking powder
80g pumpkin purée
- Preheat your oven to 180°C. Grease a muffin tin or line with paper cases.
- Soak the oats in the milk for 10-15 minutes in a large bowl. Whisk the honey and the egg together and add to the oats.
- Sieve in the flour, baking powder and sugar and combine.
- Once fully combined, stir in the pumpkin purée and place the mixture into cupcake cases.
- Bake in the oven for 15-20 minutes until golden and cooked through.
- Allow to cool before decorating!
Halloween Boo-Nana Pops
Makes: 6 Pops
3 bananas
60g desiccated coconut
100ml natural yogurt
dark chocolate, melted
6 kebab skewers
- Peel and slice the bananas in half and insert the kebab skewers into them like ice pops.
- Taking one at a time, cover the banana in yogurt. Then, roll the banana in desiccated coconut.
- Lay the banana flat on a baking tray. Dip a cocktail stick on the melted chocolate and draw on the ghost face.
- Place in the freezer until solid.
