Healthy Halloween Treats

Healthy Halloween Cupcakes

80g porridge oats

180ml milk

1 tbsp honey

1 egg

4 tbsp caster sugar

135g flour

2 tsp baking powder

80g pumpkin purée

 

  1. Preheat your oven to 180°C. Grease a muffin tin or line with paper cases.
  2. Soak the oats in the milk for 10-15 minutes in a large bowl. Whisk the honey and the egg together and add to the oats.
  3. Sieve in the flour, baking powder and sugar and combine.
  4. Once fully combined, stir in the pumpkin purée and place the mixture into cupcake cases.
  5. Bake in the oven for 15-20 minutes until golden and cooked through.
  6. Allow to cool before decorating!

 

Halloween Boo-Nana Pops

Makes: 6 Pops

 

3 bananas

60g desiccated coconut

100ml natural yogurt

dark chocolate, melted

6 kebab skewers

 

  1. Peel and slice the bananas in half and insert the kebab skewers into them like ice pops.
  2. Taking one at a time, cover the banana in yogurt. Then, roll the banana in desiccated coconut.
  3. Lay the banana flat on a baking tray. Dip a cocktail stick on the melted chocolate and draw on the ghost face.
  4. Place in the freezer until solid.
