If you're looking for a Friday fish dish that is quick and simple to prepare then look no further than this morning's Seafood Pie. Fishmonger George Stephens joined us to dish up this family favourite.
Serves 6
INGREDIENTS
2 carrotts
1 onion
1 leek
3 sticks celery
2 egg yolks
1kg mashed potato buttered
50g plain flour
50g butter
500ml full fat milk
1 fish stock cube
200g grated white cheddar
Fresh parsley chopped
200g salmon cubed
200g haddock cubed
200g smoked cod
200g fresh prawns
METHOD
To make the sauce
Melt 50g butter in a heavy bottomed saucepan.
Add the flour and stir with a wooden spoon
Add the 500ml milk slowly
Now add your fish stock cube
Bring the sauce to a simmer and stir in the grated cheese
Add the chopped parsley and set aside
Chop your carrots, onion, leek and celery in to small cubes and gently fry them of in a little olive oil until they are soft and then set aside
When you have mashed your potatoes add a good knob of butter, 2 egg yolks and season with salt and pepper. Mix it all well together
To assemble the fish pie
Get a large pie dish and place your vegetables on the bottom of the dish
Then add your fish, followed by your white sauce
Now put your mashed potato on top of this and use the back of a fork to make designs in the mash
Bake the pie at 170°C for 40 minutes
