Spiced Pan Roast Monkfish Cheeks ,Braised lentil Salad ,Sriracha Mayonnaise

Ingredients:

  • 6 Monkfish Cheeks
  • Spice Mix, Paprika, chilli, cumin
  • 100g Lentils blanched
  • 70g Diced Onion ,Carrot, Celery, leek
  • 40g Polenta & Plain Flour Mixed
  • 2 Heads Baby Gem, Washed
  • Olive Oil
  • Balsamic
  • 50g Sriracha Mayonnaise
  • 20g Butter
  • 1 Lemon

 

Method:

 

  • Heat a non Stick Pan, Dredge the Monk Cheeks in The Flour , Polentaand spice mix and shake off any excess.
  • When the pan is Hot add some oil and a Knob of Butter. Fry the Fish , Browning on each side. This will take 4 minutes. Take the pan off and squeeze lemon juice on top.
  • While the fish is cooking, Cook the vegetable mix in a pot with oil. Should be a little Crunchy. Add the Lentils and take off the heat,
  • In a bowl add the lentil Mix to the baby gem Heads. Then dress with the Olive Oil and Balsamic.
  • Spoon some Sriracha Mayo on each plate and add the Monk Cheeks.
  • Dress with The lentil salad
