Five Spiced Roasted Monkfish with Green Thai Curry Butter Sauce and Scallion Mashed Potato

Ingredients:
For the Monkfish:
- 1 tbsp rapeseed or olive oil
- 1 tbsp butter
- 4 portions monkfish (160-180g each)
- 5 tbsp Chinese five-spice powder
- Salt and freshly ground black pepper
For the Cabbage:
- 50g butter
- ½ savoy cabbage, shredded
- 2 slices smoky bacon, chopped
For the Curry Butter Sauce:
- (80g) butter
- 1/2 tsp curry paste Thai green
- (120ml) heavy cream
- Juice of ½ lemon
- Salt, to taste
For the Scallion Mashed Potatoes:
- (200g) seasoned mashed potato (at room temperature)
- ¼ bunch scallions, chopped
- 50g butter
- (60ml) heavy cream
- Salt, to taste
Method:
Cook the Monkfish:
- ?? Heat a non-stick frying pan over medium heat.
- ?? Add oil and butter, heating until the butter starts to brown.
- ?? Season monkfish with Chinese five-spice powder, salt, and pepper.
- ?? Sear the fish on all sides, then transfer to a hot oven (200°C/180°C fan) for 6-8 minutes.
- ?? Let the fish rest for 2 minutes before serving.
Prepare the Cabbage:
- ?? In a saucepan, melt butter over medium heat.
- ?? Add sliced bacon season with salt and pepper.
- ?? Add shredded cabbage, cover, and cook for another 3 minutes.
- ?? Stir in chopped smoky bacon and scallions, cover, and set aside.
Make the Curry Butter Sauce:
- ?? In a saucepan, melt butter over medium heat.
- ?? Stir in curry paste and cook for 1 minute until fragrant.
- ?? Add heavy cream and simmer until the sauce thickens.
- ?? Stir in the juice of ½ lemon and season with salt.
Prepare the Scallion Mashed Potatoes:
- ?? In a saucepan, melt butter over medium heat.
- ?? Stir in the chopped scallions and cook for 1-2 minutes until softened.
- ?? Mix the scallions into the seasoned mashed potatoes.
- ?? Add heavy cream and stir until smooth. Adjust seasoning with salt as needed.
Serve:
- ?? Place the scallion mashed potatoes in a large bowl.
- ?? Top with the cabbage mixture, then place the monkfish on top.
- ?? Drizzle with the curry butter sauce and serve.
