Bang Bang Chicken Tacos

INGREDIENTS
For the Chicken:
• 3 Chicken breasts boneless, skinless, cut into cubes
• 2 handfuls of Panko breadcrumbs
• 2 Eggs whisked
• 1 clove Garlic powder
• 1 tbsp Onion powder
• ½ tsp Smoked paprika
• 1 tsp Sea salt
For the Bang Bang Sauce
• 100g Mayonnaise
• 1 ½ tbsp Sriracha hot sauce
• 2 tbsp Honey
• 1 tbsp Rice wine vinegar
• Chopped coriander
• To serve: Slice limes, 12 Med size corn Tortillas, sliced ice berg lettuce
METHOD
1. Season the chicken bites with the garlic and onion powder, salt and smoked paprika. Mix well to marinate for 4 mins
2. Dip the chicken bites in the egg mixture. Let the excess drip off, and coat in the panko
3. Repeat for all the pieces of chicken, and arrange in your air fryer basket or light fry with a shallow wok with oil
4. Air fry the chicken at 400°F for 10 minutes of fry at 165c until cooked and crispy
5. While the chicken is cooking, mix all the sauce ingredients together and combine together well
6. Warm your tortillas on the pan and keep warm. Add some slice lettuce, add the chicken that’s being tossed in the sauce. Enjoy!
