Lamb Kebabs With Jewelled Couscous And Tzatziki

Ingredients

 

 

For the Kebabs

1 lb minced lamb

2 shallots finely chopped

2 cloves garlic crushed

75g breadcrumbs

1 egg

½ TSP cumin

Bunch flat parsley

Bunch mint

Salt and pepper

 

For the couscous

 

200g couscous

200ml boiling water

½ TSP cumin

½ TSP paprika

½ TSP ground coriander

½ TSP chilli powder

Seeds of ½ pomegranate

50g flaked toasted almonds

Fresh mint

Fresh coriander

Fresh flat leaf parsley

1 red chilli seeded and chopped finely

 

Tzatziki

100ml greek yoghurt

½.cucumber grated and strained

Fresh mint

Zest of 1 unwaxed lemon

Salt and pepper.

 

Method

 

Fry off the shallot and garlic and allow to cool.

Place all kebab ingredients in a bowl and mix well..form into shape and roast in oven at 180 degrees for 20 minutes or until a core temp of 67 minimum.

 

Place the dried couscous.in a large bowl.

 

Place.all spices.in a measuring jug and.pout over the water, pour all over the couscous and cover with a lid and allow to absorb.

Sprinkle.over the pomegranate seeds, flaked almonds, chopped chillies and fresh herbs.

 

Tzatziki

Grate the cucumber and squeeze out the juice.

Add it to the yoghurt, add I the chopped mint, lemon zest and season to taste.
