Pasta Pesto Al Forno

INGREDIENTS
200g penne pasta
2 chicken breasts
1 red onion or 2 banana shallots
2 cloves of garlic (chopped)
Handful of shitake mushrooms
3 tsp of basil pesto
100 ml double cream
Handful of grated parmesan
1 ball of fresh mozzarella
Serve with some fresh basil
METHOD
1. Preheat your oven to 200C
2. Bring the water to the boil. Season the water with sea salt and cook the pasta.
3. Finely slice the red onion and slice your mushrooms and set aside.
4. Finely slice the chicken breast, season well and cook in a hot frying pan with bit of oil until cooked.
5. Remove the chicken from the pan and add the onions, garlic and mushrooms. Season with salt and pepper and cook for 5 minutes.
6. Add the chicken back into the pan and add the pesto and cream and reduce it for a few minutes.
7. Drain the cooked pasta and add it into the pan and season with salt and any extra pesto if needed.
8. Sprinkle over some grated parmesan and mozzarella and place into the oven or under the grill. Enjoy!
