Thai Spiced Chicken Noodle Salad

Ingredients

For dressing

  • Juice of 2 limes                                                                                                                                                                 
  • 3 tablespoon Sesame oil                                                                                                                                                            
  • 3 tablespoon soy sauce                                                                                                                                                            
  • 2 tablespoon honey                                                                                                                                                                     
  • 2 teaspoon fish sauce                                                                                                                                                                           
  • 1 Chopped Red Chilli                                                                                                                                                                    
  • 2 tbsp Sweet Chilli Sauce

 

For the Spiced Chicken:

  • 500 gm Chicken fillet                                                                                                                              
  • 2red chilli                                                                                                                                          
  • 1 shallots                                                                                                                                                     
  • 1 handful corriander                                                                                                                                                            
  • 2 lime juice                                                                                                                                                                                                                        
  • 1 tsp turmeric                                                                                                                                                                                  
  • 1 cup coconut milk                                                                                                                                                               
  • 1 tbsp sugar                                                                                                                                                                                
  • 1 tsp Fish sauce

For salad

  • 2 carrots (thinly sliced)                                                                                                                   
  • 1 cup Green Mango / Unripe Mango                                                                                        
  • 1 Cucumber sliced                                                                                                                                                               
  • 1 Handful Baby  Spinach                                                                                                                                                    
  • 1 Handful of mint roughly Chopped                                                                                                                                
  • 1/2 cup Roasted Cashew nut (roughly Chopped)                                                                                                                    
  • 1 Irish green cabbage (shredded)                                                                                                                                             
  • 1 cup vermicelli Noodle                                                                                                                                                          
  • 1 Chinese Leaves

 

Method:

1.Mix all ingredients and blend it all together.   Marinate the chicken in mix for a few hours if possible.

2.Heat up griddle pan and grill the chicken.

3. Soaked the rice noodle with boiling hot water then pour in cold eater and leave it to cool, and strain it with colander.

5.Make the dressing by whisking all the ingredients for the dressing together in a bowl or simply shake them in a jar.

6.Add all the salad ingredients to a large bowl along with the dressing. Toss everything well, serve, and enjoy!
