Harissa Chicken

Ingredients

Serves 4

  • 4 chicken fillets
  • Half a chorizo link
  • 2 white onions, sliced
  • 4 cloves of garlic, sliced
  • 1 tsp of cumin seeds or ground cumin
  • 2 tsps of Harissa pasta
  • 1 carton of passata
  • 1 tsp of honey
  • 1 pack of baby potatoes
  • 1 jar of roasted red peppers, drained and sliced
  • Coriander or fresh oregano to serve

Method

1. Cook the onions in a big pot with a tablespoon of oil over medium heat until they go soft and golden. Next, add your garlic, cumin, harissa, and honey. Season with salt and pepper.

2. Chop the chicken and chorizo into chunky pieces and toss in the spicy onion mix.

3. Add the passata and a splash of water. Let it cook with the lid on for 30 minutes on low to medium heat.

4. After it has cooked for 30 minutes, add the roasted red peppers and potatoes to the pot and stir to combine. Let it cook for another 15 minutes until the potatoes are cooked.

If freezing: Don’t add the potatoes. Allow to cool and freeze in portions. When you are ready to eat, defrost the casserole and put it into a pot. Add your baby potatoes, and allow them to cook in the sauce. They will soak up all the yummy flavours. You could cook a bag of microwaveable baby potatoes and serve them with the dish as a shortcut.
