Eoin's Double Cheese Smash Burgers w/ Bacon Cheese Fries

Ingredients:

- 400g high quality beef mince

- 8 slices american style cheese slices

- 1 white onion, finely diced

- 4 brioche buns or burger bun of choice

- 2 tbsp oil 

- 200g streaky bacon or pancetta

- 50g shredded cheese

- 500g white potato, cut into chips 

- Iceberg lettuce, shredded

- Large tomatoes

- 2 tbsp mayonnaise

- 1 tsp mustard

- 2-3 pickles or gherkins 

- 1/2 tsp smoked paprika

- 1/2 tsp onion/garlic powder

- 1 tsp cajun spice

- Salt and Pepper 

1. Preheat the oven to 200 degree C. Slice the potatoes into small thin chip sizes (you could par boil in boiling water for 3-4 minutes). Toss in oil, salt, pepper and cajun spice and load onto a roasting dish. Roast in the oven for 30 minutes until golden and crispy. 

2. For the smash burgers: separate your mince into 8 x 50g balls of mince. On a hot skillet or pan, add 3-4 of the balls and using a spatula & parchment paper, press the mince balls down into the pan to flatten out fully (parchment will help the spatula not stick). 

3. Season the top side of the burgers with salt and pepper and after 1-2 minutes and the bottom is started to cripy and brown, carefully flip the patties over. Add a slice of cheese on each of the top sides and continue to cook the underside for 1-2 minutes.

4. Lift one cheesy patty on top of another to give a double decker stack - and remove from the pan. Toast the burger buns to brown & heat them.

5. For the burger sauce: Add the mayonnaise, mustard, onion/garlic powder, 2 finely diced pickle slices and smoked paprika to a bowl and whisk well.  

6. Build the burgers with sauce on the base of the bun, shredded lettuce, tomatoes, pickles, sliced onions and the double stack patties on top. 

7. Once the fries are nearly finished cooking, add some shredded cheese over the top and let melt. Quickly saute and crispy the pieces of bacon or pancetta and add on top of the cheesy fries for a bacon and cheese chip!
