Aoife Noonan's PB & J Crumble Snack Bars
(Makes 10 Bars)
Ingredients:
For the Shortbread Base:
85g Butter, softened 85g Smooth Peanut Butter 85g Light Brown Sugar 195g Plain Flour
For the Filling:
275g Strawberry or Raspberry Jam
For the Crumble Topping:
65g Plain Flour 55g Butter, cold 40g Oats 65g Light Brown Sugar 45g Salted Peanuts
Method:
For the Shortbread Base:
1. Preheat the oven to 200C or 180C if using a fan oven. Grease and line a 20 x 30cm baking tin with parchment paper.
2. In a large bowl, cream the butter, peanut butter, and light brown sugar together until smooth.
3. Add the flour and beat until just starting to come together. The mixture should still be quite crumbly. Press the biscuit dough into the tin and smooth out evenly with the back of a spoon or palette knife.
For the Filling:
1. Spread the jam evenly over the top of the shortbread base and set aside.
For the Crumble Topping:
1. In a large bowl, rub the flour, butter, oats, sugar and peanuts together until the mix resembles coarse breadcrumbs. Sprinkle the crumble over the top of the jam layer evenly.
2. Bake in the preheated oven for 45-50 minutes until the top is golden brown.
3. Remove from the oven and allow to cool completely before cutting into 10 bars to serve.
