Slow Cooked Beef & Fish Tacos
Ingredients:
- 1 joint of housekeepers cut beef
- 1 onion
- 2 cloves garlic
- 1 tin tomatoes
- 1 stock cube
- 1 tsp Cumin, Paprika, Mixed Herbs,
- Salt & Pepper
- 1 salmon fillet
- Taco Shells
- 2-3 tortillas
- 1 avocado
- 50g Sour Cream
- 50g cheese
- 1 courgette
- 2-3 tomatoes
- 1 lemon
- Fresh Coriander
Instructions:
1. Season the joint of beef with the cumin, paprika, mixed herbs, salt & pepper. Make sure it’s well coated.
2. Add the beef to a pot (or slow cooker) and all the white onion, garlic cloves, tin tomatoes, stock cube, and let slow cook in the pot for 3-4 hours or 10+ hours in a slow cooker.
3. Season the salmon with the same ingredients and bake in the oven for 20 min at 180oC.
3. Shred the beef into the sauce and let sit.
For the Salsa:
- Slice the tomatoes, cucumber, red onion into small pieces and add in some lemon juice, chopped coriander and season with salt and pepper
Build the Tacos:
- Assemble the tacos into either soft shell or crunchy shell tacos with some lettuce in the base, pulled beef OR flakes cooked salmon, salsa, avocado, sour cream and cheese over the top.
