Salmon & Prawn Spaghetti, Chilli, Ginger, Baby Spinach, Asian Dressing

Derry Clarke's Salmon & Prawn Spaghetti, Chilli, Ginger, Baby Spinach, Asian Dressing

Ingredients:
- 130g Diced Salmon.
- 150g Peeled King Prawn.
- 130g Crab Claws.
- 150g Baby Spinach.
- 1 small Onion peeled & diced.
- 2 cloves of Garlic peeled & chopped.
- 1 Red Chilli chopped.
- 30g Sliced fresh Ginger.
- Juice of 1 lime.
- 1 Lime cut in half for garnish.
- 1 Red Chilli chopped for garnish.
- 4 Spring Onion chopped for garnish.
- 2 Tbsp Chilli Jam.
- 2 Tbsp Soy sauce.
- 1 Tbsp Oyster sauce.
- 1 Tbsp Fish sauce.
- 3 Tbsp Sesame oil.
- 1 Tbsp tomato paste.
- 2 Tbsp fresh coriander.
- 150g Spaghetti cooked (keep some of the water)

Method:
1. Heat a large pan over moderate heat, add sesame oil, toss the onion, garlic, chilli, ginger for a minute or so till ingredients are soft.
2. Add the chilli jam, soy, oyster sauce, fish sauce, and tomato paste, simmer for a minute then add the seafood toss and season with sea salt and black pepper.
3. Add the spaghetti and a little of the cooking liquid, place in bowls and sprinkle over the spring onion and chilli, garnish with half lime.
