Eoin Sheehan's Sweet & Sticky Chicken Stir Fry
Ingredients:
1-2 chicken 2 tbsp Honey 3-4 tbsp Soy sauce 2 tbsp Sweet chilli 2 cloves Garlic 1 thumb Ginger 1 tbsp Sesame oil 1 tbsp Vinegar 3-4 mushrooms 1 onion 3-4 broccoli florets 2 nests of Noodles 1 tsp cumin 1 tsp Corn starch Scallions to garnishInstructions:
1. Marinade the cut chicken pieces in a bowl with the soy sauce, honey, sweet chilli and vinegar for 30+ min.
2. In a frying pan, heat the sesame oil and lightly fry the diced onion, ginger & garlic for ~1min.
3. Add the marinaded chicken along with the marinade and cook until the chicken is coated and beginning to brown.
4. Add the chopped vegetables to the stir fry with a seasoning of cumin, salt & pepper. Add a little water to loosen if needed
5. Pop the noodle nests into a boil of boiling water with the broccoli florets and cook for 3-4 min.
6. Once softened, bring the noodles & broccoli from the pot into the pan and toss. Add some more soy sauce if needed
7. Serve with some chopped scallions, chilli flakes or crushed nuts.
