Homemade Granola & Baked Apples

Homemade Granola & Baked Apples

 

Ingredients for Granola

  • 40g Coconut Oil
  • 120ml Honey
  • 1tsp Salt
  • 340g Jumbo Oats
  • 150g Chopped Mixed Nuts (I’ve used Pistachios, Pecans & Hazelnut)
  • 100g Mixed Seeds (I’ve used Pumpkin & Sunflower)
  • 50g Coconut Shavings
  • 1 large egg white
  • 100g Chopped Dried Fruit (I’ve used Apricots, Figs & Cranberries)

 

Method for Granola

  1. Heat the oven to 150°C and line a baking tray with baking parchment paper.
  2. Gently heat the oil, honey and salt together in a small pan and heat gently until the oil has melted, allow to cool slightly.
  3. Mix the dry ingredients, apart from the fruit, in a large bowl.
  4. Stir the honey and oil into the dry mix
  5. Beat the egg white in a separate bowl until frothy, mix into the oat mixture.
  6. Spread out on the baking sheet and bake for about 30-35 minutes until golden, stirring occasionally.
  7. Leave to cool and crisp up on the tray, then stir in the dried fruit. Store in an airtight container.

 

Ingredients Baked Granola Apples

  • 5 Large tbsp Granola
  • 1tsp Cinnamon
  • 1tbsp Brown Soft Sugar
  • ½ Orange Zest & Juiced
  • 4 Apples, cored and scored around the circumference
  • 20g Butter
  • Crème Fraîche to serve

 

 

Method for the Baked Apples

  1. Heat oven to 200°C.
  2. Mix the granola, cinnamon, sugar and orange zest and juice.
  3. Put the apples into a baking dish and spoon the granola mixture into the hole, spooning over any mixture left.
  4. Top each one with a knob of butter and bake for 30 mins until soft and sticky.
  5. Serve with crème fraîche
