Pad Thai
Ingredients:
125g flat rice noodles
1 large red onion, halved then sliced
3 garlic cloves, finely chopped
2 spring onions, cut into batons
1 red chilli, chopped into rounds
75g of shiitake mushrooms, sliced
Juice of 1 lime
2 tsp Thai fish sauce
2 tsp soy sauce
2 tsp honey
2 tbsp salted peanuts
Small bunch of fresh coriander, torn
Method:
- Put the rice noodles into a pan and cover with boiling water. Simmer until the noodles are cooked, drain and set aside.
- Stir-fry the onion, garlic, spring onions and chili until the onion has softened. Throw in the shiitake mushrooms and continue to stir-fry until soft.
- Add the cooked, drained noodles and mix everything together well.
- Add the lime juice, fish sauce, soy sauce and honey and mix together, ensuring everything is coated.
- Sprinkle with the peanuts and torn coriander before serving.
