Ingredients: 

- 3 eggs

- 1 tin of tomatoes

- 1 onion

- 2 cloves garlic

- 1 tbsp tomato purée

- 1/2 a bell pepper 

- 1/2 a courgette

- 1 tsp cayenne pepper

- 1 tsp cumin

- Fresh coriander

- 1/2 tsp chilli

- 2-3 slices of sourdough bread

- Half an avocado

- Salt & pepper 

- Parsley to garnish

 

Method

  1. In a frying pan, add 1 tbsp olive oil and fry off the chopped onion, garlic, pepper and courgette. 
  2. When softened, add the tinned tomatoes, tomato puree and season with the spices. Mix throughout and season with salt and pepper. Add in some fresh coriander.
  3. Let the sauce reduce for 10-15 minutes until thickened. Make two wells in the pan with a spoon and crack two eggs in. Cover with a lid and reduce the heat.
  4. Once the eggs have poached in the sauce, remove from the heat and serve with sourdough bread, avocado, feta and garnish with parsley.
