Crab claws with tomato, chilli, garlic and lime

Crab claws with tomato, chilli, garlic and lime

Ingredients

1kg of large crab claws

60ml extra virgin olive oil

2 garlic cloves, finely chopped

4 shallots, finely chopped

2 fresh chilli, chopped

200g ripe tomatoes

1 bunch of chopped coriander

Juice of 1 lime

Sea salt and freshly ground pepper

 

Serve with some grilled sourdough sour bread  

 

 

Method

  1. Place a large pan on a medium to high heat, add the olive oil, carefully add the tomatoes, Sauté for 2 minutes until the tomatoes start to break down, add the garlic, shallots and chilli, continue to cook for 3 minutes, add the crab claws and lime
  2. Cook for 3 minutes until the crab claws have warmed through, add the chopped coriander and season with salt and pepper
