Turkey Burger Salad

Turkey Burger Salad

Serves 4

Ingredients

Burgers

500g (1 lb)  turkey mince

1/4 tsp all spice

2 tsp onion powder

2 tsp garlic powder

Pinch salt and pepper

2 tsp Worcestershire sauce

Few spritz spray oil

 

Thousand Island Dressing (Secret Sauce)

5 tbsp mayonnaise

3 tsp ketchup / tomato puree

4 tsp pickle juice

2 tsp diced pickles

1/2 tsp apple cider vinegar

 

Big Salad Platter

4 heads baby gem lettuce

1 head cos / romaine lettuce

6 dill pickles

2 red onions

10/12 sun stream cherry tomatoes

2 avocados

2 brioche buns

100g sharp Irish cheddar cheese

 

Method

  1. Burgers: To make the burgers, combine all the ingredients in the bowl. Using cold, wet hands roll and shape them into mini burger patties (about 1-2cam thick) or little meatball shapes. Heat the barbecue or griddle pan to a medium high heat. Spritz with spray oiled cook for 5 minutes on each side. The burgers should be cooked through however if you want pop them in the oven at 140oC for 5 minutes.
  2. Dressing: Finely dice the pickles and whisk together all the ingredients. Chill in the fridge.
  3. Brioche Croutons : Preheat the oven to 160?. Tear up the brioche, spritz with a little spray oil and bake in the oven until golden brown.
  4. Salad Platter: For the salad platter, wash and dry the salad leaves. Finely slice the red onion into thin rings. Slice the pickles, tomatoes and avocados. Dice or grate the cheddar cheese.
  5. To assemble, combine all the salad ingredients on the platter. Drizzle the dressing over the top. Toss together.
  6. Top with the croutons and the mini burgers.
  7. Enjoy
