Red pepper chicken cacciatore

Kevin Dundon was in The Six O'Clock show kitchen tonight showing us how to make this delicious dish! Red Pepper Chicken Cacciatore is on the menu tonight, the picture looks absolutely glorious so we have no doubt it's going to taste amazing too! 

Ingredients
• 2 tbsp. olive oil 
• 1 chicken (broken down into 8 pieces) 
• 2 red pepper, deseeded and chopped into small pieces 
• 2 onions
• roughly chopped 
• 6 garlic cloves, crushed 
• 5-6 thymes stalks 
• 2 x 400g tins whole tomatoes 
• salt and pepper 
• 4 tbsp parmesan cheese 
• 500g baby potatoes 
• 2 handful of salad leaves 

Method

• Preheat the oven to 190C/375F/Gas Mark 5. 
• In a pan over moderate heat, drizzle 1 tbsp of olive oil, and add the chicken pieces, cook for 3-6 minutes turning occasional until browned. 
• Transfer the chicken pieces to a baking dish and season with a pinch of salt and pepper.
• In the pan that was used for the chicken, add a further drizzle ofolive oil and add the red peppers, onions, garlic, thyme and cook until softened but not coloured. 
• Pour the tomatoes into the pan and cook over a gentle simmer for 5 - 8 minutes or until thick and glossy.
• Take off the heat and pour the sauce over the chicken pieces and place in the oven for 25-30 minutes or until the chicken is cooked through. 
• Meanwhile, cook the potatoes in boiling water for 15 - 25 minutes until cooked through. 
• Sprinkle with some parmesan, and boiled potatoes and enjoy!
