Seared Tuna Tacos With Avocado And Lime

SEARED TUNA TACOS WITH AVOCADO AND LIME

 

Ingredients:

·         2 tuna loin steaks 

·         1 avocado

·         2 limes

·         1 red chilli

·         1 red onion

·         Handful shredded red cabbage

·         Fresh coriander

 

Chickpea Tortillas:

·         100g chickpea flour (gram flour)

·         2 tbsp milled flaxseed

·         2 tbsp water

·         160ml water

·         1/2 tsp smoked paprika

·         1/4 tsp ground coriander

·         1/2 tsp salt

·         oil for frying

 

Method:

1.      Soak flaxseed in 2 tbsp water for 10 minutes.

2.      Thinly slice a red onion and squeeze over the juice of a lime, allow to steep until serving.

3.      In a screaming hot pan, sear your tuna steaks for 30 seconds each side, set aside to rest until serving.

4.      Mash together your avocado and the juice of one lime, adding as much chopped chilli as you like

5.      Whisk together chickpea flour, spices and salt, add 160ml water and the flaxseed mix and whisk to combine.

6.      Heat oil in a non stick pan, pour in enough batter to coat the pan, swirl and flip once the edges begin to curl - repeat until you have 6-8 tortillas.

7.      To serve, spread avocado on each tortilla, top with sliced tuna, red onion, red cabbage and freshly coriander.
