Healthy Blueberry & Lemon Muffins

Makes 9 large muffins

 

Ingredients:

4 bananas

3 eggs

50ml coconut oil

60ml maple syrup

1 tsp vanilla extract

200g oats

1 heaped tsp baking powder

1 tsp cinnamon

150g blueberries

Juice and zest of 1 lemon

 

Method

1.    Preheat the oven to 180 degrees C

2.    Line a muffin tray with muffin cases.

3.    Mash the bananas in a food mixer until liquid and there are no lumps.

4.    Add the eggs, 50 ml melted coconut oil, maple syrup and vanilla extract and mix again until combined.

5.    Place the oats in a food processor or nutribullet and blend until it turns into oat flour.

6.    In a separate bowl, combine the oat flour, baking powder, and cinnamon.

7.    Add the dry mix to the banana mixture and mix until combined.

8.    Stir in the blueberries and lemon zest and juice.

Spoon the batter into the muffin cases and bake in the preheated oven for 20-25 minutes until a skewer inserted into the centre comes out clean.
