Chef Marcus O'Laoire was in the kitchen to show us how to make this perfect Christmas starter.
Ingredients
400g good quality black pudding
6 peeled, cored and halved pink lady apples
1 white onion
caster sugar
Chinese 5 spice
butter
thawed puff pastry
Method
In a pan, soften sliced white onion until translucent, add caster sugar and allow to caramelize.
Add butter and chinese 5 spice, followed by apples.
Cook for about 2 minutes and place chunks of black pudding in the gaps between the apples. cook for another minute.
Preheat an oven to 180c.
Take a sheet of thawed puff pastry and arrange on top of of the contents of the pan, pushing in the sides to create a snug fit.
Place in oven until pastry is cooked and golden brown.
Allow to cool and turn onto board for service.
