(makes 10 pancakes)
Ingredients:
150g plain flour
1 tsp baking powder..this adds the light fluffiness
Pinch salt
60g castor sugar
130ml Buttermilk
1 large egg
50g knob of butter melted
Tsp good vanilla essence
Method:
1. Sieve the flour, baking powder and salt into a large bowl. Whisk in the sugar
2. Melt the butter and add to the buttermilk in a jug.
3. Lightly whisk the egg into this and then combine with the dry ingredients (whisk while adding to avoid lumps)
4. Add vanilla and whisk till smooth, then rest for 10 mins
5. Preheat the oven at 175c and bake the bacon turning once
6. Remove any liquid and once cooked turn off the oven and leave the bacon inside to continue cooking to go crispy and remove all moisture. This takes approx 10 minutes
7. In a large frying pan spray with grease spray and drop the pancake batter into the pan without spreading to much
8. Cook on a medium high heat for approx 3 – 4 mins each side or until golden
9. Place on a plate in a stack and drizzle with good quality maple syrup. (Fresh berries can be added to the batter prior to cooking or just after). Also, chia seeds add lovely crunch or try fresh zested orange to also add flavour.
