Ingredients:
2 Tins Condensed Milk (Refridgerated)
90ml Lime Juice and Zest of two limes
1/2 Lime Sliced for garnish
250g Coconut Biscuit (Crumbed)
120g Butter (Softened)
150ml Whipped Cream
Method:
1. Zest two limes very finely. Add zest to condensed milk in a mixing bowl
2. Add lime juice and mix till stiff, do not over mix. Place in the fridge to set.
3. Crush biscuits, add butter and line the inside of a 25cm round tin foil baking pan.
4. Place in the fridge to set while you whip the cream to stiff peak.
5. Remove the biscuit base from frdge and fill with the condensed milk filling.
6. Top with whipped cream and garnish with lime slices.
