INGREDIENTS:
6x Chinese Spring Roll Pastry Sheets
1 egg beaten
40 g Feta Cheese crumbled
20 g Mozzarella Grated
20 g Parmesan Cheese grated
15g Red Cheddar Cheese grated
Pinch of Fresh Parsley chopped
Pinch of Fresh Thyme chopped
Pinch Cracked Black Pepper
Vegetable Oil for frying
For The Mint Yogurt:
200g Natural Yogurt
1 Tablespoon Mint Sauce
METHOD:
1. Heat oil in fryer or in shallow pan till medium heat
2. Place pastry sheet on chopping board
3. Sprinkle crumbled feta cheese , Parmesan, Mozzarella and red cheddar over the centre of
the pastry
4. Add herbs and Cracked Black Pepper on top
5. Brush sides of pastry sheet with the beaten Egg
6. Roll up pastry half way and then fold in the sides
7. Continue to roll up tight in a cyclinder shape
8. Brush spring roll with beaten egg to seal
9. Place into heated oil and cook evenly for 6-8 minutes until golden brown and Crisp all over m
10. Remove from oil and place on kitchen paper to drain
11. Mix yogurt and mint sauce together and serve with side salad
