Ingredients:
The Beef:
2 tbsp cornflour
Black pepper
2 lean beef medallions, cut into strips
Low-calorie spray oil
2 garlic cloves, finely chopped
1 onion, finely chopped
1 red and 1 green pepper, deseeded and sliced
1 fresh red chilli, sliced
300ml beef stock
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp Worcestershire sauce
Method:

First off, mix your cornflour in a bowl with a good few grinds of black pepper. Toss your beef slices in this mix to coat them evenly.
2 Get a pan on a medium heat and add a little oil. Toss on your beef slices and cook them fully. Then remove them from the pan and place them to the side.

Now to make the sauce. Get your pan on a medium heat and add in a drop of oil. Give it a minute to heat up, and then add your garlic and onion. Cook for a few minutes until the onion softens up. Then add in your peppers and chilli and cook for another minute or two.

Add in your stock, soy sauce, oyster sauce and Worcestershire sauce. Give a few grinds of black pepper.
Cook on a medium heat for 5-8 minutes. If you find the sauce is watery, mix some cornflour with a drop of water and throw that in.

Add your beef slices back into the pan and cook it all for another few minutes. Serve with rice.
