INGREDIENTS:
· 3 chicken breasts
· Half of a tub of light cream cheese
· 4-5 pieces Smoked Bacon/Rashers
· 30g Parmesan
· 40g Grated Mozzarella/White Cheddar
· 4 tbsp Caesar Sauce/Dressing
· Nachos/Tortilla Chips
· Crispy Onions Scallion finely sliced for garnish
METHOD:
1. Start by Poaching the chicken breasts (for 35 mins) in boiling water - once it’s cooked through removed from the water and pop into a large mixing bowl.
2. Using a Whisk or two forks shred up the chicken.
3. Fry off the bacon until golden and crisp, chop roughly and add into the chicken.
4. Next add in the cream cheese, parmesan and mozzarella and mix well.
5. Then add in the Caesar sauce and mix in too.
6. Pop into an oven proof dish and bake in the oven for 20 mins at 180° C until the cheese has melted and the top has a light golden colour.
7. Remove and Garnish with some scallion and Parmesan, add the nachos on the side and dip and devour.
8. Alternatively spread out the nachos and spoon the Caesar mix over the top and add a drizzle of Caesar sauce to finish. - Enjoy
