INGREDIENTS:
200g butter
200g dark chocolate (70% cocoa solids)
175g caster sugar
3 eggs
125 ground almonds
2 tsp vanilla extract
METHOD:
1). Preheat the oven to 16o?C and line a 9” square baking tray with baking paper.
2). Melt the butter & chocolate together in either the microwave or in a bowl set over hot water
(my preferred method), stirring regularly to ensure it doesn’t burn.
3). In a separate bowl whisk the caster sugar and eggs until much pale and fluffy. Fold in the
almonds and the vanilla extract. Finally, add the chocolate & butter.
4). Pour into the baking tray and bake for 20-25 mins. Leave it ever so slightly underdone in the
centre as it will carry on cooking in the residual heat
