Brunch Bruchetta

INGREDIENTS:

4 x Streaky  Rashers 

1 x Avocado large 

2 x Slices Sourdough.Bread 

200g Halloumi Cheese Sliced 

4 x Tablespoons Sweet Chilli Sauce 

1 x lime juice 

2 x Tbsp Rapeseed oil 

1 x Garlic Peeled 

Salt n pepper 

 

METHOD

1) Cook Streaky Bacon in a Hot Pan or Grill till golden crisp and set aside 

2) Add oil to pan and add Sliced Halloumi cook on medium heat on each side for approx 2 minutes until golden in colour 

3) Add Sweet Chilli Sauce and coat Halloumi Fully in Sticky Sauce 

4) Turn off and set aside 

5) Cut garlic in half and gently rub Sourdough Slice with garlic 

6) Spray both sides of Sourdough bread with Oil and gently toast on pan or grill until golden crisp on each side 

7) Once toasted place on serving plate 

8) Peeled and Destone Ripe Avocado Then mash up the avocado flesh adding salt n pepper grated garlic and lime juice to taste 

9) To assemble the dish top toasted Sourdough with the smashed Avocado mix ,then top with the golden crisp sticky sweet chilli Halloumi cheese.

10) Add crispy bacon and drizzle some more sweet chilli sauce over the finished dish 

11) Serve and Enjoy
