Chicken Burger With Avocado, Bacon & Hollandaise Sauce

INGREDIENTS:
Chicken Breast cut into thin slices and marinated with fresh Rosemary
Bacon Rashers
Avocado (sliced)
Handful of Lettuce
Brioche Burger Buns
Sprig of Fresh Rosemary
Tomato Sliced
Rapeseed Oil

For The Hollandaise Sauce:
Egg Yolks
Pound of Butter (melted till piping hot)
Tbsp. White Vinegar
Lemon
Sea Salt & Cracked Black Pepper (Seasoning)

METHOD:
1. Place the rapeseed oil in a hot non-stick pan
2. Cook each thinly sliced chicken breast until cooked.
3. Pan-fry the bacon in a hot pan making sure it’s cooked with a good colour.

For The Hollandaise Sauce:
1. Place the egg yolks and vinegar into a tall jug.
2. Slowly add the hot melted butter to the egg and vinegar mix with the hand blender on full until
thick.
3. Add a squeeze of lemon, then season with salt & pepper.

Plating The Dish:
1. Toast the Brioche Bun, and put a little hollandaise on each slice of bread.
2. Add some lettuce and sliced tomato, then place the cooked chicken on top.
3. Place one piece of Baltimore Bacon on top, then spoon over with the hollandaise sauce
4. Put the brioche burger bun on top, and serve on a plate or board with a side salad!
