Green Monster Chocolate Cupcakes topped Wild green buttercream. Monster eyes made out of rollout fondant. These little monster cupcakes are great to make with your little monsters in the kitchen this Halloween and are very edible too!
Ingredients:
Makes about 10 depending on the cupcake case size
For the cupcakes:
· 120g unsalted butter, softened
· 150g Siúcra caster sugar
· 2 eggs, lightly beaten
· 150g plain flour
· 4 tbsp cocoa powder
· 2 tsp baking powder
· 1 orange, juice and zest
For the butter cream:
· 250g butter, softened
· 550g Siúcra icing sugar, sieved
· 1 tsp vanilla extract
Decoration:
· A few drops green food colouring
· Siúcra Ready Roll Icing, for eyes
· Black food colouring
Method:
1. Preheat the oven to 180°C/Fan160°C/Gas 4. Line a muffin tin with cupcake cases.
2. To make the cupcakes; cream the butter and sugar until pale and fluffy.Add in the beaten eggs. Sift the flour, baking powder and cocoa powder into the mixture. Carefully fold in with the orange juice and orange zest.
3. Neatly spoon the mixture into the cases and bake for about 12 – 15 minutes.
4. To check if it is baked, insert a skewer into the middle of a cupcake and it should come out clean. Allow them to cool completely before icing.
5. To make the buttercream, cream the butter and then add the Siucra icing sugar, vanilla and green food colouring together until soft and fluffy – this will take about 4 minutes.
6. Fill a piping bag fitted with a star nozzle with butter cream and decorate the cupcakes.
7. For the eyes, roll the ready roll icing into small balls. Colour a small piece with black colouring and roll into small balls. Press them together and place on the green piped buttercream on each cupcakes.
