Chocolate Mousse With Strawberry Garnish

INGREDIENTS:
Dark chocolate x 180gr
Cream x 150 ml
Sugar x 50gr
Fresh strawberries x 1 punnet
Good quality balsamic vinegar x 50ml
Eggs x 3 separated
Pink peppercorns x 1 tbsp
METHOD:
For The Mousse:
1. Melt the dark chocolate over barely simmering water
2. Ensure the base of the dish is not touching the pot- may scald the chocolate
3. Mix the yolk & sugar and cook au Bain Marie- over a pot of boiling water
4. Whisk lightly in the figure of 8 until it doubles in volume
5. It should also hold its form
6. Whisk the egg whites at high speed until fully formed (like meringue minus sugar)
7. Lightly whip the cream and set aside
8. Fold the melted chocolate into the egg yolk sabayon mix moving it around in circles
9. Do not whisk as it will break down the mixture
10. Add the egg white in by folding also but gradually to incorporate all the air
11. Finally finish with the whipped cream
12. The mix may look split but do not worry
13. Cover with film and allow to rest in the fridge in the fridge for a few hours
For The Strawberries:
1. Wash & half the strawberries
2. Place them into some balsamic vinegar
3. Allow to sit at room temperature for minimum 1 hour
To Serve:
1. Take a warm spoon and make a dollop in the middle of the plate
2. Dress the strawberries around the plate
3. Add the balsamic syrup around & some of the pink peppercorns
